New word: rainbow (rahn-bow). He's also working on jumping. Right now his feet leave the ground at slightly different times and hit also at slightly different times, and he doesn't get much lift, but it's pretty fun to watch.

Today we canned peaches, so we made jam, salsa, and sauce. We made 3 batches of regular jam and one batch of low-sugar jam. The sauce was just cooked-down peaches with a little sugar. The salsa, on the other hand, was the star:

1 pineapple, diced
2 mangoes, diced
8-10c peaches, diced
1 vidalia onion, finely diced
1 red bell pepper, finely diced
5+ cloves garlic, finely chopped
3/4c candied ginger, finely chopped
1/2c+ lime juice
1/2c cider vinegar
3/4c mango rum
2t salt
1t black pepper
1t red pepper flakes

We cooked the salsa just until it was boiling, then canned it. It made 16 pints, and was delicious. This is probably my favorite item we've done this summer, since we sort of "winged it" and it turned out so well.
